Today we bring you an amazing recipe for savoury and healthy pancakes! The best part is that they don’t require much preparation, so if you’re a bit of a disaster in the kitchen, this recipe is for you, and you don’t even need to fry anything. And if you don’t like vegetables, this is an amazing way to start moving away from being a picky eater and begin eating veggies without even noticing their taste or texture.
What ingredients does it use?
It includes basic ingredients like eggs, cheese, mozzarella, and a bit of whatever flour you prefer, along with all the vegetables you want.
What vegetables can you use?
From carrots to broccoli, zucchini, cauliflower, bell pepper or kohlrabi. The secret is cutting them very thin or grating them, so they cook evenly and add flavour without overpowering the whole thing.
Can I add cheese?
Of course, cheese is the king of this recipe. Our favourite is cottage cheese because it’s high in protein and low in fat, but you can replace it with ricotta if that’s what you have at home, or with your favourite cheese. Just remember to drain it well so the pancakes don’t turn out watery!
How do I make the recipe?
Easy, grate all the veggies you want to include. Beat two or three eggs, depending on how many you want to make, and into that mixture add the veggies, cheese, and flour. We recommend oat or chickpea flour to make them extra crunchy and even healthier.
Baked or air-fried
The idea is to skip the oil in this recipe, so forget about frying them. For that, our two best options are baking or using the air fryer until they’re nice and crispy, ready to eat. But you can also cook them on a skillet, just be careful to cook them through without burning the outside.
How are they served?
Easy, you can pair them with tomato sauce, guacamole, light mayo or homemade pesto, our favourite! A lot of people also serve them as a starter inside a salad or like falafel inside pita bread with yogurt sauce. We promise that once you try them, you won’t want to stop eating them because they’re incredibly delicious!
